Healthy Pancake Recipe

Who loves pancakes? Who loves being healthy? Who new you could combine both?
The following recipe combines 8 different grains plus flax seeds to create a unique, delicious flavour. High in fiber and slow digesting carbs, these will keep you full for a long time. They are ideal for mornings before busy/long days or after a strenuous workouts to replenish your energy.
Healthy pancake recipe:
In a large bowl, combine and mix
- 1/4 cup buckwheat flour
- 1/4 cup whole wheat flour
- 1/4 cup millet flour
- 1/4 cup rye flour
- 1/4 cup spelt flour
- 1/4 cup cornmeal
- 1/4 cup barley flour
- 1/4 cup oat flour
- 1/4 cup ground flax seeds
Then add and mix
- 2 cups of which ever milk you fancy
- 3 table spoon of olive oil
- 2 table spoon of maple syrup
- 2 tea spoon of baking powder
- 1 tea spoon vanilla extract
- 1/2 tea spoon sea salt or Himalayan salt
They will be quite thick, so put them on lower heat and flip them after 2-3 minutes. You will only need to leave them on the pan for a minute or so after you flipped them.
Serve with berries and eggs or with whatever breakfast food your fancy!
Notes
These pancakes can be full vegan if you use non dairy milk. I use home made rice milk and have found it to be delicious that way. I did try it once with coconut milk and it did not mix very well.
To save time, do a huge batch of all the flours and flax seeds and keep it in the fridge. I usually just mix a cup of all them and save it in a container. When I want to make the pancakes, I just take 2 cups of the mix out of the container and mix it with the other ingredients.
